Always held the third weekend after Labor Day, this saucy event is all about those chile peppers, and the roasting spectacle that is the cornerstone of the festival is worth the trip alone (huge drums spinning over an open pit, sprayed with a hose.) Eat and wander, but do not leave without a bag of hot, oily fire-roasted chiles to add Pueblo flavor to any dish.
